Super-Simple Tortellini Soup

Happy Tuesday! Boy, have I had a crazy last couple of days. My parents finally moved into their new house, and I couldn’t be more excited! However, that came with a price…and the price was helping them move for three days in a row. Turns out they had a bit more than everyone expected, but everything is out of the storage units and in the house, so the hard part is done! I can’t wait to get back over there tomorrow night and see the progress 🙂

Well, with Max and I’s still-sore muscles, we needed an easy dinner last night so we could relax and watch a movie instead of slaving away in the kitchen all night. Max’s mom gave us the recipe for a tasty tortellini soup with only 6 ingredients, so that fit the bill for the evening! It’s been awhile since we’ve made it, and it was the perfect meal for a chilly evening. If you’re searching for an easy, inexpensive weeknight dinner, try this soup recipe!

Super-Simple Tortellini Soup


  • 2 cloves garlic, minced
  • 1 large pkg cheese tortellini (we prefer as much tortellini as possible :))
  • 1 29-oz can of chicken broth
  • 1/2 pkg frozen spinach
  • 1 can stewed tomatoes
  1. In a large saucepan, over medium heat, brown garlic in 1 T olive oil. Add tortellini and chicken broth, making sure broth covers tortellini. Turn heat up to medium-high heat and bring to boil. Reduce heat and simmer for 5 minutes.
  2. Add spinach, tomatoes, and season with garlic salt and pepper. Simmer for 15 minutes. Serve with crusty Asiago bread!
