Cakes + Cake Toppers!

As mentioned in my Friday Funs last week, Lena’s graduation was Friday. Per her request, I made her a lemon cake — the same recipe I use for lemon cupcakes! Although it was a bit lopsided, it still tasted good, and it even got the seal of approval from her New Jersey and Seattle family members 🙂

To make, simply prepare the batter the same as you would for cupcakes and divide it between two small cake pans. Bake at 350 degrees F for 20-25 minutes, or until knife stuck into center comes out clean. Let cool. Prepare frosting the same as well (NOTE: this recipe makes A TON of frosting. You could easily cut it in half or even 1/4 and have enough.). When cakes have cooled, frost top of one cake; place other cake atop frosted cake. Frost top and sides of cakes. Finish with some fun cake toppers! (I made mine with the George and Basic Shapes Cricut cartridge 🙂
