Grilled Caesar Insalata

Thanks to my small friend Lena, Max and I decided to grill Caesar salads on Sunday for dinner. I threw together a homemade Caesar dressing and Max manned the grill. We had some good Alaskan salmon fillets, so we grilled those up too! Max preferred plain romaine to grilled romaine, but I love the slightly smoky, charred flavor of a grilled romaine wedge. All that you need to do for this simple dinner is lightly toss the wedge in olive oil, salt, and pepper; throw the full wedge on the grill (don’t cut it until after grilling or it will fall apart!); and grill for about 2-3 minutes until you can see grill marks on the lettuce leaves. For the salmon, cook on the grill until the fish flakes, and remove bones/skin from fillet before eating! I’ve included my Caesar dressing if you want to give it a try! It was great! 🙂

Caesar Dressing:

  • 2 garlic cloves (or two heaping spoonfuls of garlic, the more the better!)
  • 3 T lemon juice
  • 1 T dijon
  • 3/4 cup olive oil
  • 1/2 cup fresh parmesan
Mix it all together, either with a whisk if you like it chunky or with a blender to grind up the garlic into a finer paste. Drizzle on your lettuce leaves and enjoy!
