I’ve been MIA lately with the crazy last two weeks, so my apologies! I had a short week last week for one of my best friend’s weddings, so that took up most of my time 🙂 I’m getting back in the swing of things, though, and have some good menu items planned for this week! In the past week, Max and I have been on a sweet potato kick. A friend of mine went on a tour of Hy Vee with a dietitian who pointed out good food to grab at the store. The two top takeaways that she had were to load up on spinach and sweet potatoes…so we decided to take it to heart and get our dose of sweet taters!
Last week, Max whipped up some sweet potato fries as a side for one of our meals. They were super simple to make, so much better for you than regular french fries, and tasted great! We also bought some sweet potato tater tots to accompany another grilled meal, and those were tasty as well! The brand we tried was Alexia — they have all sorts of good frozen items if you’re not in the mood to make something from scratch. Definitely a good choice!
Max’s Gourmet Sweet Potato Fries:
- 2 sweet potatoes, peeled and thinly sliced
- Olive oil
- Other seasonings, if desired
Preheat oven to 400 degrees F. Place sliced sweet potatoes in a mixing bowl and toss with olive oil, salt, and pepper. Add to a baking sheet lined with tin foil. Bake until crispy!
