A Brat for a Brat.

For those of you who don’t live in Iowa, us Iowans we’re lucky enough to get mid 60s weather yesterday! With the gorgeous weather, what better way to enjoy it than by grilling (even if by the time we got home from the gym it was dark…womp, womp). So Max and I busted out our baby grill and had brats for dinner last night. I must say, Max grills the best brats ever, so if it weren’t for him, these would likely be a bit less than mediocre…but like always, they were grilled to perfection. I did my small but important part and made a cilantro-lime dressing to drizzle over them (we were sticking to a summery theme!), and Max grilled up some skewers of red pepper and pineapple to accompany the brats. A delicious little midweek meal if I do say so myself 🙂


  • Pineapple brats (we get ours from Hy-Vee, they’re great!)
  • 1 red pepper, deseeded and cut into chunks
  • 1 pineapple, cored and cut into chunks
  • Brat buns (optional)

Boil brats in beer, then grill. Thread pepper and pineapple on skewers and grill. When finished, drizzle with Cilantro-Lime Dressing.

Cilantro-Lime Dressing:

  • 1 cup cilantro
  • 1/2 cup olive oil
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/2 t salt
  • 1/2 t pepper
  • Spoonful minced garlic

Combine all ingredients in food processor and pulse until smooth. Drizzle over brats and skewers.
